Lemon Bars - A Refreshing Summer Treat!

Prep for 11 x 15" glass pan

Crust: 1 1/3 cup butter, softened, 2 2/3 cups flour, 2/3 cup sugar.

Filling:

  • 5 eggs

  • 2 2/3 cups white sugar

  • 2/3 tsp salt

  • 1/3 cup all-purpose flour

  • 1/2 cup lemon juice

  • 1 1/3 tsp baking powder

  • 1 tsp lemon zest (optional)

Preheat oven to 350 degrees F

In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 11x15 inch pan.Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, mix lightly eggs, salt, sugar and lemon juice. Blend flour and baking powder, mix into lemon juice mixture. Stir in zest. Pour topping on crust and bake 15 -20 minutes or until top is golden brown and very close to being set in the center. Cool. Sprinkle with confectionary sugar. Cut into bars when warm and refrigerate until ready to serve.
